what we’re eating this week

I always find y’all’s “what I’m cooking this week” posts so interesting — and I have discovered a lot of tasty recipes that way too. So I figured I’d try joining in and share what we’re cooking up this week!

Buttermilk Roast Chicken with mashed cauliflower and roasted baby carrots

Chicken with Pepperoni Marinara Sauce with spinach salad and roasted broccoli

Chorizo-stuffed Poblanos (“paleo chile rellenos”) with roasted butternut squash and salad

Spaghetti Squash Casserole with ricotta, spinach, sausage, roasted peppers, sundried tomatoes, etc etc.

(can you tell we like roasted veggies up in here?)
